Hi, friends! Before we get to this sweet spring dessert, I wanted to mention THE NEW WEBSITE! Have you noticed that The Seasoned Mom got a little bit of a facelift this past week? And now, on to the recipe…
I originally tasted a “poke cake” at a church potluck many years ago, and I have been making them ever since! I love to play around with different ingredients to come up with the most delicious flavor combinations. This cool, refreshing strawberry Jell-O version is absolutely perfect for the warm weather months ahead.
A poke cake is basically just a jazzed up version of a boxed cake mix. I prepare the cake mix according to the package instructions, and then while the cake is still warm from the oven I poke holes all over the top. The cake absorbs the liquid Jell-O…creating the most moist, tender, and flavorful dessert that you will ever sink your teeth into!
The cake is so rich on its own that I love to pair it with a light whipped topping. No heavy frostings necessary! That means that this beautiful, crowd-pleasing dessert requires only a few simple ingredients and minimal prep time!
I have shared this recipe with many different friends and neighbors over the years and every single person who tries it RAVES about it. It’s actually impossible to resist!
In fact, while I was busy snapping some photos of this particular treat, Spence could not keep his hands off of it! It became quite the game: I would take a picture while simultaneously pushing away his Matchbox cars, toy tractors, and little chubby fingers that were trying to sneak onto the cake. He thought it was hilarious…and he was especially happy when he was actually allowed to eat some!
This cake is foolproof, and I have no doubt that it will soon be making regular appearances at all of your special celebrations as well!

Could you transform this info healthier cake? Perhaps a sugar free cake mix with sugar free jello mix?

I get confused when recipes say 3 ounces of jello. Do you mean 0.30 oz? 3 ounces of jello is a tremendous amount of jello. Thanks.
Hi, Fran! The recipe calls for a 6-ounce package of strawberry Jell-O. The boxes of Jell-O are marked on the outside by weight, so this is just referring to the weight of the dry box of Jell-O — not the weight of the Jell-O once it’s prepared. A small box is 3 ounces, so you can either use two 3-ounce boxes or one larger 6-ounce box. I hope that makes sense! 🙂
