Serve these 2-Ingredient Appetizers at a party and everyone will devour them — I promise! Kerrin’s Pimento Cheese Bites are creamy, crispy, and easy, making them perfect for all of your upcoming holiday gatherings.
You know that a recipe is a keeper when you ate it months ago and you can’t stop thinking about it. This is one of those gems! It just happens to be an added bonus that they take approximately 5 minutes to prepare and require only 2 ingredients!

My friend Kerrin has two beautiful daughters, and her oldest (Maggie) is in school with Gibbs and Casey.
Last fall, Kerrin brought these Pimento Cheese Bites to a birthday party at our friends’ house and everyone was raving about them! Let’s just say that they disappeared fast off of Kerrin’s platter.

After a few months had passed and I was still remembering Kerrin’s tasty appetizer, I knew that I had to ask for the recipe. If I loved these THAT MUCH, then so would all of you! Stuff this good just has to be shared…
Kerrin shops at Harris Teeter and buys their Fresh Foods Market Pepper Jack Pimento Cheese, which gives these a nice, spicy kick. Obviously, any pimento cheese would work fine. I also love the Pimento Cheese Spread that I can pick up at our local country market, Yoder’s (go there if you live in Central Virginia!!!).
You can prep these in advance, which is always nice if you’re entertaining. Just pop them in the oven for 10 minutes when you’re ready to serve them. But honestly, they’re delicious at room temperature too…so just leave them out on the buffet table and your guests will go to town! Like I said, they don’t last long!
