Happy Sunday, friends! It’s a beautiful weekend here, and I’m anxious to spend some time outside with the fam, so I’ll leave you here with some of the pictures that I snapped on my phone over the past week. Enjoy the Weekend Recap, and have a great week ahead!
Backing up to last weekend…we took the boys on a Sunday afternoon hike…
Killing some time in between school drop-offs on Monday morning, I treated Casey and Spence to a stop at Burger King for some hash browns and playtime on the indoor playground…
I’m LOVING these locally made candles right now. I “won” them at the preschool’s silent auction fundraiser last week, and I can’t decide which fragrance smells best: the Southern Champaign, Honey Maple & Bourbon, or Tea & Currants. They’re all dreamy in a not-too-overpowering sort of way!
Unfortunately, our afternoon plans were cut short that day when I had to pick Gibbs up from school at lunchtime because he was running a fever. It seems that he STILL hadn’t fully recovered from the bug that kept him home most of last week. We obviously didn’t make it to his soccer practice that evening, either. ?
Dinner on Monday was quick and easy — I just reheated some Barbecue Chicken Ramen Noodles that I had in the freezer and served them with corn muffins that I made over the weekend!
Tuesday morning’s training session with Mark included many tough exercises like medicine ball push-ups and negative chin-ups…so I spent more time than usual stretching afterwards! ?

And this is me smiling, because I survived a trip to Costco with all 3 boys in tow…

Thursday was a half-day of school for Gibbs in order to allow time for the teachers to hold parent conferences in the afternoon. So while Gibbs was occupied for a few hours, I dragged the younger two into Charlottesville to do some shopping at Target and Harris Teeter (definitely NOT their idea of a good time). Purchases of note included:
- This S’well water bottle at Target (there are TONS of colors/designs available). I’ve had my eye on the S’well bottles for a long time, so I was excited to see them in my fave store. Plus, the bees are fun…
- These FLIPZ Birthday Cake pretzels (AH-MAZING recipe and post coming soon!)
- and an easy dinner solution for our busy weeknights!
I guess that our love for tacos (and Mexican food in general) is pretty obvious, because the kind folks at Hormel sent me a fun pack so that we could try out their new prepared taco meats. This is NOT sponsored and I had no obligation to share, but I thought that you might also like to look for them. Dinner doesn’t get much easier, right?! We’ll wrap this meat in tortillas with cheese, salsa, lettuce, and guacamole and have a delicious supper ready in no time! I grabbed the beef and pork versions and added them to our meal plan for the week ahead (there’s also a chicken option to try).
We picked Gibbs up from school at noon and headed straight to lunch at his requested spot: Subway (surprise, surprise!).
After lunch my mom watched the boys while Keith and I went to the school for our conference with Gibbs’s teacher. Later that afternoon we made it outside for a walk in the woods, and then a stop at the dollar store where they each picked out a new gun (including Spencer).? Boys will be boys.
That evening after the boys were in bed, I headed out for drinks with 6 of my girlfriends! Always a fun time (and a late night)…
Friday morning’s workout with Mark included a new-to-me exercise that I really liked! This Arm Windmills exercise was basically like doing a weighted Triangle pose in yoga. Stretching + Strength + Elevated Heart Rate = Multitasking at its best!
Gibbs had the day off from school (Teacher Work Day), so after we dropped Casey at preschool for the morning, I treated these guys to one of their favorites: Friday morning donuts!
That afternoon the boys enjoyed snacks outside,
and played with punching balloons (cheapest entertainment EVER),
while I snapped some photos for an upcoming post.
Dinner that night was pizza, and here’s a very happy Keith, who made margaritas with freshly-squeezed lime juice from our new juicer!
Saturday was a beautiful day! We spent the morning on the soccer fields — Casey’s game first:

and then Gibbs’s game!
Lunchtime saw the return of the mason jar salad! While I was making one for my meal, I prepped a few more to store in the refrigerator for easy lunches throughout the week. In this mix: poppyseed dressing, chicken, strawberries, avocado, feta cheese, cucumbers, bell pepper, organic kale salad mix from Costco, and some sliced almonds on top. Hello, Spring!

That afternoon Spence napped, I worked on a blog post, and Keith and his assistants put down the cement foundation for the new fire pit that he’s constructing in our yard. I foresee many, many s’mores this summer!
Dinner was delicious and involved very little work on my part (win)! We had grilled barbecue chicken, salad, and mac and cheese. Everyone was in heaven and the plates were cleaned! After baths and bed for the kids, I spent the rest of our exciting Saturday evening on the couch with my latest book…perfect!
